Influenced from his time on the Asian cruise ships, Simon has a lot of subtle tastes of the orient throughout his signature banqueting menu. This dish is no exception. Seafood sourced from Cornwall and Devon cannot be beaten on the British Isles, this dish offers the best quality crab to accompany the main star – the premium Smoked Halibut. Thai pickled shallots and radishes help to cut through the smoky after tastes of the fish and the watermelon and twisted noodles add textures you would not expect in this signature dish. In Asia combining fruit and fish works well to refresh the palate. In the UK we are more likely to add a slice of lemon or lime to a fish dish but the watermelon works really well as an exotic replacement.
